Calming Vegan Scones on a Turbulent Day

While doing a hundred things working from the early morning and preparing for Shabbat, I was suddenly overwhelmed with the desire to bake something soft, not too sweet, but reasonably nice for a Shabbat that was about to start with the echoes of Facebook screams outlining the oppositions or exhilarations as far as the current events in the country are concerned. I just simply had to do something to calm down!

So, I picked up a recipe on one of the blogs here, and have to say that I am sorry, I don’t remember which one. I did change it a bit, of course, but I wish I’d remembered the author to thank her.

So you take:

2 1/2 cup flour

1/2 cup sugar + 2 tbsp for tossing with cranberries

1 tsp baking powder

1/2 tsp salt

6 tbsp earth balance

1 cup coconut coffee creamer or coconut milk

1 1/2 cup whole fresh or frozen cranberries

1/2 cup shredded coconut

zest of one big lemon

Preheat the oven to 400 F.

Mix together dry ingredients, then cut in earth balance in small pieces using a knife, pastry cutter or scraper until the mixture is fairly uniform.

Make a well in the center and pour the coconut liquid. Using the spoon mix the dough, but not too long, just to incorporate everything.

Turn the dough onto a floured surface and put together in a disk about half an inch high. If your working surface is not big, you might have to do it in two sets, as I did.

Take a glass, flour its rims and cut the cookie-like rounds using the rest of the dough to re-roll it together.IMG_3795.JPG

Put the dough rounds on the cookie sheet lined with parchment and spray greased with oil. I used the coconut oil spray to stay taste consistent.

Bake for about 25-30 minutes depending on your oven.

 

 

Meanwhile, prepare the lemon-lime curd:

1/2 cup of sugarimg_3798

2 tbsp Corn syrup

1 cup of lemon and lime juice mixture from fresh fruit

2 eggs beaten

2 tbsp earth balance

zest of one lemon

Mix the sugar and corn syrup over medium heat in a saucepan and add the juice and eggs constantly stirring. cook for a couple of minutes while the mixture thickens slightly.

Remove from heat and stir in earth balance and zest.

Cool off in the fridge.

When you have a warm scone with the cool tanginess of lemon sauce, accompanied by a cup of tea, you get to forget the rants and the hatred, if only for a moment.
